I think it's so easy to say something like "sustainability is at the heart of what we do." But what does that actually mean? To me, it means making choices that align with the changes I wish to see in the world. Specifically:

- using ingredients that are as local & seasonal as possible

- little or no packaging across all areas of the business. reusable or recyclable packing where packaging is unavoidable. no cling film

- utilising the oven's full heat cycle - e.g. making cookies, granola etc. as it cools

- no food waste, on a granula level - using every part of the animal or vegetable wherever possible as well as throwing nothing away
